If you ever feel tired in the afternoon, don’t give Starbucks your hard-earned cash. Instead, grab a cucumber. There are enough high-fiber carbohydrates and B vitamins to give you longer-lasting and healthier energy  than coffee, soda or energy drink. And no caffeine to mess with your nervous system either! Cucumbers are another smart way to add more water to your life. They’re 96% water. No wonder we feel they’re so refreshing, especially on a hot summer’s day.

Cucumbers are often found in tossed salads but they can also be the backbone of a delicious salad. They can stand on their own, without the help of lettuce. Garden Cucumber Salad is just one example. In this recipe, we have cukes in the salad and the salad dressing! A double win! Plus, it’s creamy which always turns any food into a comfort food for me. 

It’s become one of our classic salads when summer rolls around. And because cukes are so inexpensive, this recipe is great if you’re watching your pennies. I hope it will become one of your summer favorites too! Happy cooking!

Garden Cucumber Salad

A creamy cucumber salad with cukes as the star of salad and dressing!

Ingredients

  • 2 cups sliced cucumbers
  • 1/4 cup thinly sliced onions red or white
  • 1/4 cup lemon juice
  • 2 T maple syrup or honey
  • 1/2 tsp salt or salt substitute
  • 1/2 cup Cuke dressing found in our Spreads, Sauces and Dressings section
  • 1/4 cup sliced black olives
  • 1 cup sliced or chopped Roma tomatoes
  • 1/4 cup dried parsley or 1/2 cup fresh

Instructions

  • Layer the cucumber, and onion slices in a shallow serving dish.
  • In a separate cup, mix the lemon juice, maple syrup and Creamy Cuke Dressing.
  • Pour over the vegetables.
  • Garnish with olives, tomatoes and parsley.
  • Chill until serving.
